I am so blessed to have a son who is so driven to take a part in his health and wellness. Kendrick loves to go the gym and work out with me. I am always so honored when one of the local schools contacts my company about coming out and speaking with students. I especially enjoy going back to my home school and being viewed in my professional era. Unfortunatley I could not make this one but I sent my team out. Jackie shared that she had such a great time with these ladies. Check out Jerika in the second picture who won a set of weights because she done 73 jumping jacks. WOW!!! When is the last time you have tried to do 20 jumping jacks??? I was so impressed with this young lady. Great job Jerika!! All of these ladies did a great job with the session and shared that they learned all kinds of good stuff like how much sugar is actually in a coke and minute maid lemonade (which by the way Jerika confessed she drinks at least 2 a day), healthy lunch and snack ideas, and just good old fashioned fitness tips they can do. What better way to show your love than cooking a meal for two

Tex- Mex Spinach Omelet

Let me begin by sharing that I hope everyone has a wonderful Happy Valentine’s Day. Times are hard now and it’s no secret that money is tight. Restaurants are over priced, entrees are full of calories, and today they will be way over crowded. What better way to show your loved one how much you love them by cooking a healthy dinner straight from the heart. Omelet’s are easy and go over any time of the day. This recipe is super healthy and tastes even better! Please leave me a comment by clicking on the title and let me know how this recipe worked for you.

Ingredients
1 cup refrigerated or frozen egg product, thawed, or 4 eggs
1 tablespoon snipped fresh cilantro
Dash salt
Dash ground cumin
Nonstick cooking spray
1 ounce reduced-fat cheddar cheese, reduced-fat Swiss cheese, or Monterey Jack cheese with jalapeno chile peppers, shredded (1/4 cup)
3/4 cup fresh baby spinach leaves
Corn-Pepper Relish (below)

Directions
1. In a medium bowl, combine egg, cilantro, salt, and cumin. Beat with a whisk or rotary beater until frothy.

2. Coat an unheated 10-inch nonstick skillet with flared sides with nonstick cooking spray. Preheat skillet over medium heat.

3. Pour egg mixture into prepared skillet. Cook, without stirring, for 2 to 3 minutes or until egg mixture begins to set. Run a spatula around edge of skillet, lifting egg mixture so uncooked portion flows underneath.

4. Continue cooking and lifting edge until egg mixture is set but is still glossy and moist. Sprinkle with cheese. Top with three-fourths of the spinach and half of the Corn-Pepper Relish. Using the spatula, lift and fold an edge of the omelet partially over filling. Top with remaining spinach and the remaining relish. Cut omelet in half; transfer to warm plates.

5. Corn-Pepper Relish: In a small bowl, combine 1/4 cup chopped red sweet pepper; 1/4 cup frozen loose-pack whole kernel corn, thawed; 2 tablespoons chopped red onion; and 1 tablespoon snipped fresh cilantro.

NUTRITION FACTS PER SERVING: 142 calories, 5 g fat (3 g sat), 9 g carbo, 12 mg chol, 393 mg sodium, 17 g protein, 2 g fiber.

Can I say WOW!!!  Thank God health and wellness is a priority with our president and his family.  Michelle Obama and the Department of Agriculture hosted a Healthy Kids Fair on the lawn of the White House yesterday.   Their goal is to have more schools committ to offering nutritional foods and removing the junk food.  I am always surprised when my son buys cookies and ice cream at school.  It infuriated me when his mom told me he was in the “negative” with his account.  Wouldn’t you know that when we look at his account he was buying several packs of cookies and all sorts of junk food.  We put a lock on his account immediatley.  I was frustrated that we try so hard at home to provide him with nutritional meals, yet he could go to school and load up on junk food.

I really could relate to  Mrs. Obama’s story when she shared how things were for her growing up.  My mom didn’t offer us fast food much because just like Mrs. Obama’s parents, she simply couldn’t afford it.  If we asked for food then we ate what we asked for.  We were all active as we didn’t have video games or cable TV to keep us preoccupied.
