Today was a nice day to be me! A few ladies in my Charlotte Women’s fitness bootcamp treated me to the Charlotte Carolina Panters Game. O-yeah…and did I mention we had box seats?? Today the Carolina Panthers played the Arizona Cardinals and it was a cold one here in the Carolinas. We ate some good food and no it wasn’t healthy, but that’s okay since we kicked butt all week in fitness bootcamp. This was my Christmas present from the ladies and I have to say it was very nice of them. One of the reasons why I love doing the Charlotte ladies women’s fitness bootcamp is we truly become like a family. Are you missing that connection with some ladies? That same old treadmill needs a facelift!

Okay so you can’t stand the idea of one more morning on that treadmill…trust me I know how you feel! I have to get very creative with getting my cardio in or I am sure I would come up with a million excuses. I love nature so I take every opportunity I can to go mountain biking, hiking, and basically anything I can do outside to get a good workout in. Doing this also gives me the opportunity to involve the family. Me, my son Kendrick, and my dog Ziggy (and sometimes on a good day Jackie) all love hitting the trails. HSPT offers kettlebell training…and it’s on!!!

Hi guys I spent all weekend training with Jeff Martone from Tactical Training who is one of the first certified senior Kettlebell instructors in the United States.  Jeff is one of the best in Kettlebell instructors in the industry.  I learned lots of KB exercises and new techniquesto help maximize your workouts and burn some serious amounts of body fat.  Trust me when I say that I got my butt kicked this past weekend.  By Sunday evening I had completed over 2000 reps with a kettlebell. 

So what is kettleball training?  Glad you asked.  

Kettlebells are cannonballs with a handle and a flat surface at bottom. They’re funny looking little things. Originally from Russia, the kettlebell was used by Russian athletes (or girevik’s, as they’re called in Russia) to create resistance and train with. What initially started off as a simple tool to increase a mans (or woman’s!) strength was found to be something more. Not only was strength increasing, so was endurance, agility and balance too. The effect of the kettlebells weight distribution combined with specialized kettlebell exercises yielded greater results than expected!

I am so blessed to have a son who is so driven to take a part in his health and wellness. Kendrick loves to go the gym and work out with me. He is twelve years old and taking a strong interest in his body and wanting to look nice. Right now I am less than 4 weeks out from competing in a pro qualifier body building show in Illinois. They contacted me a few weeks ago about giving an interview on spring fitness tips for the Charlotte and surrounding area. What better way to show your love than cooking a meal for two

Tex- Mex Spinach Omelet

Let me begin by sharing that I hope everyone has a wonderful Happy Valentine’s Day. Times are hard now and it’s no secret that money is tight. Restaurants are over priced, entrees are full of calories, and today they will be way over crowded. What better way to show your loved one how much you love them by cooking a healthy dinner straight from the heart. Omelet’s are easy and go over any time of the day. This recipe is super healthy and tastes even better! Please leave me a comment by clicking on the title and let me know how this recipe worked for you.

Ingredients
1 cup refrigerated or frozen egg product, thawed, or 4 eggs
1 tablespoon snipped fresh cilantro
Dash salt
Dash ground cumin
Nonstick cooking spray
1 ounce reduced-fat cheddar cheese, reduced-fat Swiss cheese, or Monterey Jack cheese with jalapeno chile peppers, shredded (1/4 cup)
3/4 cup fresh baby spinach leaves
Corn-Pepper Relish (below)

Directions
1. In a medium bowl, combine egg, cilantro, salt, and cumin. Beat with a whisk or rotary beater until frothy.

2. Coat an unheated 10-inch nonstick skillet with flared sides with nonstick cooking spray. Preheat skillet over medium heat.

3. Pour egg mixture into prepared skillet. Cook, without stirring, for 2 to 3 minutes or until egg mixture begins to set. Run a spatula around edge of skillet, lifting egg mixture so uncooked portion flows underneath.

4. Continue cooking and lifting edge until egg mixture is set but is still glossy and moist. Sprinkle with cheese. Top with three-fourths of the spinach and half of the Corn-Pepper Relish. Using the spatula, lift and fold an edge of the omelet partially over filling. Top with remaining spinach and the remaining relish. Cut omelet in half; transfer to warm plates.

5. Corn-Pepper Relish: In a small bowl, combine 1/4 cup chopped red sweet pepper; 1/4 cup frozen loose-pack whole kernel corn, thawed; 2 tablespoons chopped red onion; and 1 tablespoon snipped fresh cilantro.

NUTRITION FACTS PER SERVING: 142 calories, 5 g fat (3 g sat), 9 g carbo, 12 mg chol, 393 mg sodium, 17 g protein, 2 g fiber.
